=> Honestly, based off the ingrediesnts alone, this recipe I can get behind and admit that the essetials nutrients are there, but I would not say I love it. You get proteins from the chicken and beans; fibers and micronutrients and such. But the lack of veggies is bugging me. For me a soup is not completed without some type of cabbge or carrots to boost up the nutrients and the overall texture. This recipe deserves an 8.5/10 for me.
Hi, it has been months since I’ve been here. Honestly with the time I have for studying, socializing and the scarcity and the expense of ingredients here in Vietnam, it is not a good ride to follow this cookbook continuously. Not to complain about anything, but to have most of the Western ingredients here is so difficult: the majority is not sold at supermarket (even the international ones), and I havd had to find alternatives; the the pricing is KILLING me. Please be understanding for me because as a student, spending that much money on food is not possible.
But what upset me the most is only few people enjoy my dish and the recipes does not match with the Vietnamses tastebuds. With only my mom and my dad willingly to try my food, more and more recipes stocking up the whole fridge to the point that there were not spaces left. That really upseted me and made me lose motivation for this blog.
However, I spent the last few months to focus on myself and adjusting the recipes to produce less food, I finally have the courage to cook and to write blogs again.
About the soup here, for the past few days of experimenting, I am surprise this cookbook has finally one spicy dish. The one thing got me struggled with most is the salsa verde one. I literally had to improv on this. I bought green chilies, tart tomatillos, herbs, onions, then grill them then mash them all together to create the salsa. The whole process there took more then an hour. With the chicken, it is fairly easy when you just only bake it in the oven with salt, pepper and olive oil. To be fair, this soup tasted quite nice with the tangy and spicy from the salsa and the rich and nutty from the beans. However, the soup lack textures from the lack of vegetables. If I can do this soup again, I would add cabbage, zucchini or carrots. For the easiniess, this one gets a 3/10. For the tasting, it gets a 7/10. For the texture, a 5/10 would be enough.
