Vegetable broth only needs your vegetable scraps (parts of vegetables that you don’t need in your main dish that you want to throw away, but instead that, save them to build your own vegetable broth), or any veggies to your own liking. But the main theme for vegetable broth is celeries, carrots, onions, garlic, salt and peppercorns, and I really recommend using dried shiitake to enhance the flavour. Here is the ingredients that I used:

-Celery

-Shallots

-Garlic

-Chives

-Carrot

-Parsley

-Basil

-Cilantro

-Olive oil

-Salt, peppercorn

=>Vegetable broth is a highly versatile use to add depth and savory to dishes like soups, stews, pasta, risotto,… Without a doubt this broth is PACKED with fiber, vitamins, minerals, antioxidants and many more micronutrients. A straight 10/10 for nutrition.

This might be the easiest recipe I’ve ever made in my kitchen. You literally just need to chop the veggies, add a little bit of spice, a tad of olive oil for that healthy fat, and let it boil then simmer a bit, for about 1 hour or more. And honestly, all that light work will bring you a broth that is heavenly and make you levitate. Someone would bake or stir-fry the veggies for minutes before adding in the water to let all the flavour out, I haven’t doen that before, but maybe the next time I’ll try. This recipe is really up to your liking, your taste, you can add any vegetables you want, or cook how long you want, or do it however you want, it is all ok. But the 3 main components for a basic vegetable broth are: aromatic base (celery, carrot, onion), Depth & aromatics (garlic, peppercorn, salt), fresh herbs (bay leave, parsley, thyme, or any herbs you have or you like). For the effortlessness, convenience, time-saving this dish has, I would give it 13/10. Love. It
