Ingredients:

=> For a side dish like this, it’s a good replacement for actual carbs like bread and rice. Since it has the heart-healthy fat, antioxidants, fiber from the vinaigrette and potatoes are a good source of fiber and carbohydrates. Therefore I’ll give this recipe nutritional wise a 9.5/10.

This may have been BY FAR THE EASIEST recipe to make and the HARDEST to mess up. I think it’s only the matter of checking the potatoes to not get them overcook and tasting the vinaigrette to your liking. Honestly, I’ve been lovinggg vinaigrette lately because it is easy to make and sooo good sooo acidic so it sets my appitizer up for my main. I ate this potato salad along side with my steak so that I can add up the protein intake, and I swear, I would cook this for my friends and family now. The one thing I would change, is that I will peel the potatoes because its texture really throw me off. To rate this recipe, a straight 10/10 is only fair: quick and easy to make, convenient, pairs well with a savory main and a nutrient-dense dish.
