=> A warm, cozy and low-calorie soup is defenitely this. With just aroung 100-180 kcal. However, that is just when I use this recipe. Tomato-basil soup is herbacious, slightly tangy and sooo comforting for a cold and rainy night. Tomato is packed with lycopene, an antioxidant associated with oxidative stress. It also provides vitamin C, potassium and folate. Basil offers a small amount of vitamin K. The soup alone lacks of protein and carbohydrates, so add a little drizzle of olive oil to add healthy fats, helps absorbing lycopene. Or pairs it with beans, lentils, eggs, chicken or a whole-grain bread to make the soup more filling. The overall nutrient score would be 7.5/10.
The cooking was easy enough but finding the ingredients was like a scavenger hunt. Looking for even a small can of tomatoes is impossible so i got to improv on processing them. First boil, and peel the tomato skin. Then I used the mortar and petsle to slightly crush them with mince garlic, herbs and olive oil. After that, I sauteed the onion, garlic to get their aromatic, and add in the tomatoes, cook a little bit then pour in the broth. Let it simmer a bit, sprinkle in some basil leaves. Remove from heat, blend the ingredients to create a smooth or chunky soup based on your liking. For me, I lovee this soup simply because it gives me cozy vibe, but the whole shopping and blending things kind of lowering the scores down a bit. I would give the recipe an 8.5/10.
